I'm BERRY addicted...

During my attempt to eat a "healthy" late night dinner run to the local fast food joint, I fell in love!!  The new Almond Berry Chicken salad from Wendy's is AMAZING!!!!  I was craving the salad all weekend, and could no longer resist purchasing two more within a three day span.

Eating at Wendy's multiple times a week was beginning to eat into my Dave Ramsey's envelope budget system for the month.  Therefore, I took a more economical approach and took a trip to my local grocery store to make my own Berry Almond Chicken salad, and it hit the SPOT!!!


Printable Recipe
Berry Almond Chicken Salad
 1 c.     50/50 Salad Mix (Mixed Greens/Spinach)
1/2 c.    chopped Rotisserie
1/4 c.    fresh blueberries
2 large strawberries hulled and cut into pieces1 tbsp.  sliced almonds

Shaved Parmesan Cheese
Raspberry Vinaigrette

Add all items in a bowl.  Sprinkle with desired parmesan cheese and vinaigrette.  Enjoy!!

Wow! It's already been two weeks since we started the fast, and its been amazing.  I've been able to reflect over my life and everything that I'm grateful for.  There's been bumps, bruises and headaches along the way, but over all God's been so good to me.

When I started writing, again, two weeks ago it was my intention to keep a journal of all of the dishes that I made.  As you can see, I'm two weeks behind.  Now it't time to play catch-up...let's go!! :)

Lemon Garlic Chicken

Lemon Garlic Chicken


2 lbs. chicken wings

1 Lemon

5 cloves of garlic

Kosher Salt (TT)

Pepper (TT)


Cooking Spray




1.       Preheat the oven to 350 degrees.  Spray a Pyrex dish with cooking spray and sit to the side.

2.       Clean the chicken wings removing any remaining feathers and rinsing under water. 

3.       Place the cleaned chicken in the Pyrex pan and generously season both sides of the chicken with Kosher Salt and pepper.

4.       With the palm of your hand roll the lemon on the counter to help loosen the fresh lemon juice.  Thinly slice half the lemon and distribute evenly over the chicken.  Squeeze the remaining half of the lemon over the chicken


Uncooked Lemon-Garlic Chicken
5.       Using the back of the knife (I used a metal measuring cup) smash the garlic, remove the skin and evenly distribute the smashed garlic over the chicken.

6.       Cook for 25 minutes at 350 degrees or until golden brown.

Today was the first day of my Daniel Fast.  This is the second time that I’ve done this fast, this time I plan to be more successful!  Hey, we all fall short sometimes! J
When I first learned about the Daniel Fast it was through my church Mt. Zion, and we were doing a corporate fast with the whole congregation.  This time I’m doing it completely on my own (well, I convinced my boyfriend to do it with me), also coinciding with Lent.  While doing any fast you have to have a reason or a purpose for fasting. 
This year my theme is Love, Peace, and Hope.  I know, it sounds a little cliché but that’s what I’m praying for.  While I complete my journey I’ll be using my handy dandy, Bible App on my iPhone.  It’s absolutely AMAZING!  It allows you to follow a daily reading guide for if you want to read the bible in a year, if your lonely, also if you want to learn scriptures about Love, Peace, and Hope.
Today’s scriptures about love were:
                                1 John 4:16 (MSG)- We know it so well, we’ve embraced it heart and soul, this love comes from God.
1 John 4:20-21 (MSG)- If anyone boast, “I love God,” and goes right on hating his brother or sister, thinking nothing of it, he is a liar.  If he won’t love the person he can see, how can he love the God he can’t see?  The command we have from Christ is blunt: Loving God includes loving people. You’ve got to love both.
That is POWERFUL!!!  You have to love people if you love God!!!

Becoming Victorious

My FAVORITE movie!!!
During summer camp one year our prissy counselor, Miss Rita, didn’t like taking us outside so her back up plan was to pop in a movie.  We watched the same movie, every time, every day.  “Sister Act II: Back in the Habit,” I hated it then but it’s actually my favorite movie till this day.  One of my favorite parts of the movie is when Whoopi Goldberg is talking to the young Lauryn Hil and quotes Ernest Hemingway, ““if you want to be a writer than you write” and if you want to be a singer than you sing” (paraphrased).  

Well I want to be victorious in every aspect of my life...therefore, I will be VICTORIOUS!!!

Since a young girl, I knew that God had a mission for me and that he was going to use me in the public eye.  But, if you know me or have known me for a while you’re probably scratching your head right now, “Shy, little ol’ Brittini?” Yup, that’s me!

All of my life I’ve been working towards what I knew what God wants me to do with the gifts I’ve been blessed with.  A few years ago, I had my “ah ha” moment and I knew where I’m supposed to be and I’m just trying to align myself to get there; one step at a time and one day at a time.
